- Large Eggs (12): The star of the show! Eggs form the base of our deviled egg filling and provide protein and richness to the burrito. We’ll be hard-boiling these to create the perfect creamy center for our filling.
- Mayonnaise (½ cup): This adds creaminess and binds the deviled egg filling together. Opt for your favorite brand of mayonnaise; full-fat mayonnaise will provide the richest flavor and texture.
- Yellow Mustard (2 tablespoons): Mustard provides a tangy kick that balances the richness of the mayonnaise and eggs. Dijon mustard can also be used for a slightly sharper flavor.
- Hot Sauce (1 teaspoon, or to taste): A dash of hot sauce adds a subtle warmth and depth of flavor. Use your preferred brand of hot sauce, and adjust the amount to your desired spice level. For a milder flavor, you can use a milder hot sauce or omit it altogether.
- Salt (½ teaspoon, or to taste): Salt enhances the flavors of all the other ingredients and is crucial for seasoning the deviled egg filling properly.

- Optional Fillings (Choose your favorites): This is where you can customize your burritos! Consider adding cooked and crumbled bacon, diced avocado, sautéed spinach, diced tomatoes, sliced green onions, or pickled jalapeños for extra flavor and texture.
Instructions
- Hard-Boil the Eggs: Place the eggs in a saucepan and cover them with cold water by about an inch. Bring the water to a rolling boil over high heat. Once boiling, remove the pan from the heat, cover it, and let it sit for 10-12 minutes for perfectly hard-boiled eggs. Immediately transfer the eggs to an ice bath to stop the cooking process and make them easier to peel. Let them cool completely in the ice bath.
- Peel the Eggs: Once the eggs are cooled, gently peel them under cool running water. The ice bath should make the shells come off easily.
- Prepare the Deviled Egg Filling: Cut the peeled eggs in half lengthwise. Carefully scoop out the yolks and place them in a medium-sized bowl. Set the egg white halves aside.
- Mash the Egg Yolks: Using a fork, mash the egg yolks until they are smooth and crumbly. Ensure there are no large lumps for a creamy filling.
- Add the Mayonnaise, Mustard, and Hot Sauce: To the mashed egg yolks, add the mayonnaise, yellow mustard, and hot sauce.
- Season with Salt and Pepper: Season the mixture with salt and black pepper. Start with the recommended amounts and adjust to your taste. You can always add more seasoning, but you can’t take it away.
- Mix the Filling: Stir all the ingredients together until they are well combined and you have a smooth and creamy deviled egg filling. Taste and adjust seasonings as needed. If you prefer a tangier filling, add a little more mustard. For a spicier kick, add more hot sauce.
- Warm the Tortillas (Optional but Recommended): Warming the tortillas makes them more pliable and easier to roll without tearing. You can warm them in a dry skillet over medium heat for about 15-20 seconds per side, in the microwave wrapped in a damp paper towel for about 15-20 seconds, or directly over a gas stovetop flame for a few seconds per side, being careful not to burn them.
- Assemble the Burritos: Lay a warmed tortilla flat on a clean surface. Spoon a generous amount of the deviled egg filling (about ¼ to ⅓ cup) down the center of the tortilla.
- Add Cheese and Optional Fillings: Sprinkle shredded cheese over the deviled egg filling. If using any optional fillings like bacon, avocado, or spinach, add them on top of the cheese.
- Roll the Burritos: To roll the burrito, fold in the sides of the tortilla towards the center, then bring the bottom edge of the tortilla up and over the filling, tucking it in as you roll tightly towards the top edge. Ensure the burrito is rolled snugly to prevent it from unraveling.
- Serve Immediately or Brown (Optional): You can serve the burritos immediately as they are. For a warmer, slightly crispy burrito, you can brown them in a skillet.
- Brown Burritos (Optional): Heat a lightly oiled skillet or griddle over medium heat. Place the rolled burritos seam-down in the skillet and cook for 2-3 minutes per side, or until golden brown and slightly crispy. This step is optional but adds warmth and a pleasant texture.
- Garnish and Serve: Cut the burritos in half (optional) and garnish with a sprinkle of paprika. Serve immediately and enjoy!
