  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

For the Enchiladas:

  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup enchilada sauce (spicy or mild, depending on preference)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

Creating Spicy Beef Breakfast Enchiladas is a straightforward process. Follow these steps to bring this delicious dish to your table:

Step 1: Prepare the Beef Filling

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon.
  5. Season with chili powder, cumin, salt, and pepper. Stir to combine and remove from heat.

Step 2: Cook the Scrambled Eggs

  1. In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  2. Melt butter in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet.
  4. Cook gently, stirring frequently, until the eggs are just set and slightly creamy. Remove from heat.

Step 3: Assemble the Enchiladas

  1. Preheat your oven to 350°F (175°C).
  2. Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
  3. Lay a tortilla flat on a clean surface. Spoon some beef filling along the center of the tortilla.
  4. Add a portion of scrambled eggs on top of the beef.
  5. Sprinkle with a mix of cheddar and Monterey Jack cheese.
  6. Roll up the tortilla and place it seam-side down in the prepared baking dish.
  7. Repeat this process with the remaining tortillas and filling.

Step 4: Bake the Enchiladas

  1. Pour the remaining enchilada sauce over the rolled tortillas.
  2. Sprinkle any remaining cheese evenly over the top.
  3. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  4. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  5. Garnish with fresh cilantro before serving, if desired.
