Savory Turkey Ham Cheddar Muffins

  • Author: Alessia

Ingredients

  • All-Purpose Flour: 3 cups, forms the structural base of the muffins, providing a light and tender crumb.
  • Baking Powder: 2 tablespoons, a leavening agent that makes the muffins rise and become fluffy.
  • Baking Soda: 1 teaspoon, another leavening agent that reacts with acidic ingredients (if any) and enhances browning.
  • Salt: 1 teaspoon, enhances the flavors of all other ingredients and balances the overall taste.
  • Large Eggs: 3, bind the ingredients together, add richness, and contribute to the muffin’s structure.
  • Milk: 1 ½ cups, adds moisture to the batter, creating a tender texture and aiding in mixing.
  • Vegetable Oil: ¾ cup, adds moisture and richness, contributing to a soft and moist crumb. You can substitute with olive oil for a slightly different flavor profile.
  • Cooked Turkey Ham: 1 ½ cups, diced, provides a savory, meaty element to the muffins and a delightful chewiness. Use good quality turkey ham for the best flavor.
  • Sharp Cheddar Cheese: 2 cups, shredded, adds a bold, cheesy flavor that perfectly complements the turkey ham. Sharp cheddar offers a more pronounced taste, but you can use mild or medium cheddar if preferred.
  • Fresh Chives or Green Onions: ½ cup, chopped, adds a fresh, mild oniony flavor and a pop of color to the muffins. These herbs enhance the savory notes and add a touch of brightness.

Instructions

  1. Preheat the Oven and Prepare Muffin Tin: Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line it with paper liners. Greasing or lining prevents the muffins from sticking and makes for easy removal after baking. If using paper liners, lightly spray them with cooking spray as well for extra insurance.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Whisking is crucial to ensure these dry ingredients are evenly distributed, preventing lumps and ensuring proper leavening throughout the batter. Even distribution of leavening agents leads to uniformly risen muffins.
  3. Whisk Wet Ingredients: In a separate medium bowl, whisk together the large eggs, milk, and vegetable oil until well combined. Ensure the eggs are fully incorporated into the milk and oil mixture. This creates an emulsion, which helps to create a smooth and cohesive batter when combined with the dry ingredients.
  4. Combine Wet and Dry Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Using a rubber spatula or wooden spoon, gently fold the wet ingredients into the dry ingredients until just combined. It’s absolutely vital not to overmix the batter at this stage. Overmixing develops gluten, which can result in tough, dense muffins instead of light and tender ones. A few streaks of flour are okay at this point.
  5. Fold in Turkey Ham, Cheddar Cheese, and Chives/Green Onions: Add the diced turkey ham, shredded cheddar cheese, and chopped chives or green onions to the batter. Gently fold these ingredients into the batter until they are evenly distributed throughout. Again, be careful not to overmix; just ensure everything is incorporated.
  6. Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each cup about two-thirds to three-quarters full. Using an ice cream scoop or a large spoon can help ensure even distribution and consistent muffin sizes. This also helps in uniform baking.
  7. Bake the Muffins: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The baking time can vary slightly depending on your oven, so it’s important to check for doneness. The muffins should be golden brown on top and spring back lightly when gently pressed.
  8. Cool in Muffin Tin and Serve: Once baked, remove the muffin tin from the oven and let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely or serve warm. Cooling in the tin slightly helps them firm up before removing. If you used paper liners, they can be removed immediately.
