Instructions
- Prepare the Strawberries: Begin by washing your fresh strawberries thoroughly under cool running water. Hull the strawberries by removing the green tops using a paring knife or a strawberry huller. Slice the hulled strawberries into smaller pieces. This will help them blend smoothly and evenly throughout the popsicle mixture.
- Blend the Ingredients: In a high-speed blender or food processor, combine the sliced strawberries, Greek yogurt, honey or maple syrup, lemon juice, and vanilla extract (if using). Blend all ingredients together until completely smooth and creamy. Blend for about 1-2 minutes, ensuring there are no chunks of strawberries remaining. Taste the mixture and adjust the sweetness by adding more honey or maple syrup if desired. If you prefer a tangier popsicle, you can add a little extra lemon juice.
- Pour into Popsicle Molds: Carefully pour the blended strawberry yogurt mixture into your popsicle molds. Leave a little space at the top of each mold to allow for expansion during freezing. If your molds come with popsicle sticks, insert them now, ensuring they are centered in each mold.
