  • Wonton Wrappers: 24-48 wonton wrappers, depending on the size of your mozzarella sticks. These thin wrappers are the secret to the incredible crispiness and lightness of this recipe. They create a delicate shell that perfectly complements the gooey cheese.
  • Large Egg: 1 large egg. Used to create an egg wash, which helps the wonton wrappers adhere to themselves and creates a golden-brown crust during frying.
  • Water: 1 tablespoon of water. Mixed with the egg to create the egg wash, thinning it slightly for easier application.
  • Vegetable Oil or Canola Oil: Approximately 2-3 cups for frying. Choose a neutral-flavored oil with a high smoke point, like vegetable or canola oil, for frying the mozzarella sticks to a perfect golden brown.
  • Optional Seasoning (for dipping sauce or wrappers): Italian seasoning, garlic powder, or paprika. Enhance the flavor profile by adding a pinch of your favorite seasoning to the egg wash or directly to the dipping sauce.
  • Marinara Sauce (for dipping): Your favorite marinara sauce, warmed. The classic pairing for mozzarella sticks! Choose a high-quality marinara sauce for the best taste.

Instructions

  1. Prepare the Cheese Sticks: If using full-size mozzarella sticks, cut each stick in half crosswise to create shorter sticks. This makes them easier to wrap and fry evenly. If using half-size sticks, they are ready to use as is. Cutting the sticks in half ensures they cook through quickly and evenly, preventing the wonton wrapper from burning before the cheese is melted.
  2. Set up your Egg Wash: In a small bowl, whisk together the egg and water until well combined. This mixture will act as the “glue” to seal the wonton wrappers and help them brown beautifully during frying. The egg wash is crucial for sealing the wrappers and creating a crispy, golden crust. Water helps to thin the egg slightly, making it easier to brush.
  3. Wrap the Mozzarella Sticks: Place a wonton wrapper on a clean, dry surface. Position a mozzarella stick diagonally in the center of the wrapper. Brush the edges of the wonton wrapper lightly with the egg wash. Fold one corner of the wrapper over the mozzarella stick, then fold in the two side corners. Roll tightly to enclose the mozzarella stick completely, pressing gently to seal the edges. Repeat this process with the remaining mozzarella sticks and wonton wrappers. Wrapping diagonally creates a secure seal and ensures the cheese is fully enclosed, preventing it from leaking out during frying. Pressing firmly seals the wonton wrapper and prevents it from unraveling.
  4. Heat the Oil: Pour vegetable or canola oil into a medium-sized, heavy-bottomed pot or deep skillet until it reaches a depth of about 2-3 inches. Heat the oil over medium-high heat until it reaches a temperature of 350°F (175°C). You can use a deep-fry thermometer to monitor the temperature or test the oil by carefully dropping a small piece of wonton wrapper into the hot oil; it should sizzle and turn golden brown in about 15-20 seconds. Maintaining the correct oil temperature is vital for achieving crispy, golden-brown mozzarella sticks without burning them or leaving them greasy. A deep-fry thermometer is the most accurate way to monitor the oil temperature.
  5. Fry the Mozzarella Sticks: Carefully place a few wrapped mozzarella sticks into the hot oil, being careful not to overcrowd the pot. Fry for 1-2 minutes per side, or until golden brown and crispy. Work in batches to maintain the oil temperature and ensure even cooking. Overcrowding the pot will lower the oil temperature and result in soggy, greasy mozzarella sticks. Frying in batches ensures the oil temperature remains consistent and the sticks cook evenly.
  6. Drain and Cool: Once golden brown, remove the mozzarella sticks from the oil using a slotted spoon or tongs and place them on a wire rack lined with paper towels to drain excess oil. Let them cool slightly for a minute or two before serving, as the cheese will be very hot. Draining on a wire rack allows air to circulate around the mozzarella sticks, preventing them from becoming soggy. Paper towels underneath catch any excess oil.
  7. Serve Immediately: Serve the wonton mozzarella sticks immediately while they are hot and crispy, with warm marinara sauce for dipping. Mozzarella sticks are best enjoyed fresh and hot when the cheese is melted and gooey, and the wonton wrapper is at its crispiest.
