Ingredients

To make this mouth-watering beef chili bowl, you’ll need the following ingredients:

  • Ground beef: 1 pound
  • Onion: 1 medium, chopped
  • Garlic: 4 cloves, minced
  • Bell pepper: 1, chopped (any color)
  • Tomato paste: 2 tablespoons
  • Canned tomatoes: 1 can (14 oz), diced
  • Beef broth: 1 cup
  • Kidney beans: 1 can (15 oz), drained and rinsed
  • Black beans: 1 can (15 oz), drained and rinsed
  • Corn kernels: 1 cup (fresh or frozen)
  • Chili powder: 2 tablespoons
  • Cumin: 1 tablespoon
  • Paprika: 1 teaspoon
  • Oregano: 1 teaspoon
  • Salt: to taste
  • Black pepper: to taste
  • Olive oil: 2 tablespoons
  • Jalapeño: 1, seeded and chopped (optional for extra heat)
  • Lime: 1, juiced
  • Cilantro: for garnish
  • Cheddar cheese: shredded, for topping
  • Sour cream: for topping

Instructions

Follow these simple steps to create your own beef chili bowl:

  1. Prepare the Ingredients: Begin by gathering all your ingredients. Chop the onion, garlic, bell pepper, and jalapeño (if using). Drain and rinse the beans.
  2. Cook the Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon as it cooks.
  3. Sauté the Vegetables: Add the chopped onion, garlic, and bell pepper to the pot. Cook for about 5 minutes until the vegetables are tender.
  4. Add the Spices: Stir in the chili powder, cumin, paprika, oregano, salt, and black pepper. Cook for another 2 minutes to allow the spices to release their flavors.
  5. Incorporate the Tomatoes and Broth: Add the tomato paste, diced tomatoes, and beef broth to the pot. Stir well to combine all the ingredients.
  6. Simmer the Chili: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, allowing the flavors to meld together.
  7. Add Beans and Corn: Stir in the kidney beans, black beans, and corn. Continue to simmer for an additional 10 minutes.
  8. Adjust Seasonings: Taste the chili and adjust the seasonings as needed. Add more salt or chili powder if desired.
  9. Finish with Lime: Just before serving, stir in the lime juice to brighten up the flavors.
  10. Serve with Toppings: Ladle the chili into bowls and top with shredded cheddar cheese, a dollop of sour cream, and fresh cilantro.
