Ingredients

Instructions

  1. Soften the Cream Cheese: Begin by taking your cream cheese out of the refrigerator at least 30 minutes before you plan to start. This is crucial because softened cream cheese blends much more smoothly, preventing lumps and ensuring a creamy texture for your cheese ball bites. If you’re in a hurry, you can carefully soften it in the microwave on 50% power in short 10-15 second intervals, being very careful not to melt it. The goal is to have it pliable and easy to work with.
  2. Combine Cheeses and Seasonings: In a large mixing bowl, add the softened cream cheese, shredded cheddar cheese, and shredded Monterey Jack cheese. Using an electric mixer (hand mixer or stand mixer) on medium speed, beat these cheeses together until they are thoroughly combined and creamy. If you don’t have an electric mixer, you can use a sturdy spoon or spatula, but it will require more effort to ensure everything is well mixed and smooth. Once the cheeses are blended, add the garlic powder, onion powder, and Worcestershire sauce. Continue to mix until the seasonings are evenly distributed throughout the cheese mixture. Taste a small amount at this stage and adjust seasonings if needed – perhaps a pinch more garlic powder or a dash of hot sauce for a little kick.
  3. Chill the Cheese Mixture: This step is essential for making the cheese ball bites easy to handle. Cover the bowl tightly with plastic wrap, ensuring the wrap touches the surface of the cheese mixture to prevent a skin from forming. Refrigerate the cheese mixture for at least 2 hours, or ideally for 3-4 hours, or even overnight. Chilling firms up the cheese, making it much easier to roll into bite-sized balls and preventing them from being too sticky.
  4. Prepare the Pecan Coating: While the cheese mixture is chilling, prepare your pecan coating. Finely chop the pecans. You can use a food processor for this, but be careful not to over-process them into a pecan butter. Pulse them in short bursts until they are finely chopped but still have some texture. Alternatively, you can chop them by hand using a sharp knife. Spread the chopped pecans in a shallow dish or plate. If you want to add extra flavor to the coating, you can lightly toast the pecans in a dry pan over medium heat for a few minutes, stirring frequently, until they become fragrant and lightly golden brown. Let them cool completely before using them to coat the cheese balls. Toasting enhances their nutty flavor and adds another layer of deliciousness.
  5. Shape into Bites: Once the cheese mixture is thoroughly chilled and firm, it’s time to shape it into bite-sized balls. Using a small spoon or a melon baller, scoop out portions of the cheese mixture. Roll each portion between your palms to form a smooth, round ball. Aim for roughly 1-inch balls, but you can adjust the size according to your preference. If you find the cheese mixture is still a bit sticky, you can lightly dampen your hands with water or spray them with cooking spray to prevent sticking.
  6. Coat in Pecans: After shaping each cheese ball bite, immediately roll it in the dish of chopped pecans. Gently press the pecans onto the surface of the cheese ball to ensure they adhere well and completely coat the bite. Make sure to rotate the cheese ball in the pecans to get even coverage.
  7. Chill Again (Optional but Recommended): For best results, especially if you are not serving the cheese ball bites immediately, place them on a plate or tray lined with parchment paper and refrigerate them for another 30 minutes to an hour. This extra chilling time helps the pecans adhere even more firmly and allows the cheese ball bites to firm up completely, making them easier to handle and serve.
  8. Garnish and Serve: Just before serving, you can garnish the cheese ball bites with a sprinkle of paprika or finely chopped fresh parsley for added visual appeal and a touch of freshness.
