Yogurt Honey Popsicles

  • Author: Alessia

Ingredients

For this incredibly easy and refreshing treat, you only need a handful of simple, wholesome ingredients. Here’s what you’ll need to gather:

  • Plain Yogurt (3 cups): The base of our popsicles, plain yogurt provides a creamy texture and a healthy dose of probiotics and protein. You can use regular yogurt or Greek yogurt. Greek yogurt will result in a thicker, tangier popsicle, while regular yogurt will be slightly lighter. For the best flavor and texture, opt for full-fat or 2% yogurt.
  • Honey (1/3 cup): Our natural sweetener, honey not only adds sweetness but also a lovely floral note that complements the yogurt perfectly. The amount of honey can be adjusted to your preference depending on how sweet you like your popsicles. Local honey can add an even more unique flavor profile.
  • Vanilla Extract (1 teaspoon): A touch of vanilla extract enhances the overall flavor, adding warmth and depth. Pure vanilla extract is recommended for the best taste.
  • Optional Add-ins (as desired): This is where you can get creative! Consider adding fresh or frozen fruit (berries, peaches, mangoes), a swirl of jam or fruit puree, a sprinkle of granola, or even a drizzle of melted chocolate for extra flavor and texture. These add-ins should be cut into small pieces for even freezing and distribution within the popsicles.

Instructions

Making these delightful yogurt honey popsicles is surprisingly simple and requires minimal equipment. Follow these easy steps to create your own batch of refreshing treats:

  1. Prepare Your Popsicle Molds: Start by getting your popsicle molds ready. If you are using reusable popsicle molds, make sure they are clean and dry. If you are using disposable cups, have them lined up and ready to go. It’s also a good idea to have your popsicle sticks handy. This initial preparation streamlines the process once the mixture is ready.
  2. Combine Yogurt and Honey: In a medium-sized mixing bowl, combine the plain yogurt and honey. Using a whisk or a spatula, gently stir the yogurt and honey together until they are thoroughly combined and the honey is fully incorporated into the yogurt. Avoid overmixing at this stage, as this can sometimes make the yogurt thinner. The mixture should be smooth and homogenous with no streaks of honey remaining.
  3. Add Vanilla Extract and Optional Add-ins: Pour in the vanilla extract to the yogurt and honey mixture. Stir again to evenly distribute the vanilla. If you are using any optional add-ins, now is the time to gently fold them into the yogurt mixture. Be careful not to overmix if you’ve added fruit, as you want to maintain the texture of the fruit pieces. Distribute the add-ins evenly throughout the mixture for consistent flavor in each popsicle.
  4. Pour into Popsicle Molds: Carefully pour the yogurt mixture into your prepared popsicle molds or cups. Fill each mold almost to the top, leaving a little space at the top for expansion during freezing. If you are using molds with lids that have built-in sticks, insert the lids now. If you are using molds without lids or disposable cups, you will insert the sticks later once the popsicles are partially frozen.
  5. Freeze for Initial Setting (Optional but Recommended for Sticks): If you are using popsicle molds without built-in stick holders or disposable cups, place the filled molds in the freezer for about 1 to 2 hours, or until the popsicles are partially frozen and firm enough to hold a popsicle stick upright. This step is crucial for ensuring your popsicle sticks stay in the center and don’t tilt to one side.
  6. Insert Popsicle Sticks (if needed): Once the popsicles are partially frozen, remove them from the freezer and carefully insert popsicle sticks into the center of each mold. Push the sticks in firmly but gently, making sure they are stable.
  7. Freeze Completely: Return the popsicle molds to the freezer and freeze for at least 4-6 hours, or preferably overnight, until the popsicles are completely solid and frozen through. The longer they freeze, the firmer and easier they will be to unmold. For best results, allow them to freeze undisturbed for a minimum of 6 hours.
  8. Unmold and Enjoy: Once the popsicles are fully frozen, it’s time to unmold them. To easily unmold popsicles from reusable molds, you can run the molds briefly under lukewarm water for a few seconds. This will loosen the popsicles just enough to slide out easily. Be careful not to run them under water for too long, or they will start to melt. If using disposable cups, you can simply peel away the paper cup to reveal the popsicle. Serve immediately and enjoy your homemade, healthy, and delicious yogurt honey popsicles!
