Instructions

  1. Preheat Your Oven and Prepare a Baking Sheet: Begin by preheating your oven to 400°F (200°C). This high temperature is crucial for achieving that beautiful caramelization and tender interior. Line a large baking sheet with parchment paper. Parchment paper prevents sticking and makes cleanup a breeze. If you don’t have parchment paper, you can lightly grease the baking sheet with olive oil.
  2. Prepare the Cauliflower “Steaks”: Carefully remove the outer leaves from the cauliflower head. To create the steaks, you’ll want to cut through the core. Place the cauliflower head stem-side down on a cutting board. Using a large, sharp knife, make a cut about 1-1.5 inches thick down the center of the cauliflower head. Repeat on the other side to create two thick “steaks” from the center. You might get thinner pieces from the sides of the cauliflower as well, which you can roast alongside the steaks – they’ll be delicious too, just might cook a bit faster. Don’t worry if the steaks aren’t perfectly uniform; the rustic look is part of their charm.
  3. Make the Honey Glaze: In a small bowl, whisk together the olive oil, honey, garlic powder, paprika, salt, and black pepper. Ensure all the ingredients are well combined to create a homogenous and flavorful glaze. If using fresh thyme, add it to the glaze and stir. The honey glaze is the key to the amazing flavor of these cauliflower steaks, so make sure it’s well mixed and fragrant.
  4. Glaze the Cauliflower Steaks: Place the cauliflower steaks on the prepared baking sheet.   6. Rest and Serve: Once roasted, remove the cauliflower steaks from the oven and let them rest for a few minutes before serving.
