Ingredients
1.5 to 2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
4–6 cloves garlic, minced
1/2 cup freshly grated Parmesan cheese, plus extra for garnish
1/4 cup extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
1/4 cup chopped fresh parsley
1 teaspoon dried oregano
1 teaspoon dried basil
3/4 teaspoon salt, or to taste

1/4 to 1/2 teaspoon red pepper flakes (optional)

Instructions
1. Prepare the Chicken: Cut the boneless, skinless chicken breasts (or thighs) into uniform 1-inch cubes. Place in a large bowl and pat dry with paper towels.
2. Make the Marinade: In a medium bowl, combine minced garlic, 1/2 cup grated Parmesan, olive oil, lemon juice, parsley, oregano, basil, salt, black pepper, and optional red pepper flakes. Whisk until well combined.
3. Marinate the Chicken: Pour the marinade over the chicken cubes and toss to coat evenly. Cover and refrigerate for 30 minutes to 2 hours, up to 4 hours.
4. Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes. Metal skewers require no preparation.

6. Cooking the Skewers: Grill on medium-high heat (375-450°F) for 10-15 minutes, turning occasionally, or bake at 400°F for 15-20 minutes, flipping halfway, or pan-sear in a skillet for 10-12 minutes, turning every 2-3 minutes, until chicken reaches 165°F internally.
7. Check for Doneness: Use a meat thermometer to ensure chicken reaches 165°F (74°C) and juices run clear.
8. Garnish and Serve: Remove skewers from heat, sprinkle with extra Parmesan and parsley, and transfer to a serving platter.
9. Rest Briefly: Let skewers rest for a few minutes before serving to redistribute juices.
