  • Author: Alessia
  • Total Time: 1 hour 30 minutes to 1 hour 50 minutes
  • Yield: 4-6 servings 1x

Description

These Garlic Parmesan Chicken Skewers are a flavorful, protein-packed dish featuring tender chicken cubes marinated in a zesty garlic and Parmesan blend, perfect for grilling, baking, or pan-searing.

Ingredients

Scale

1.5 to 2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

46 cloves garlic, minced

1/2 cup freshly grated Parmesan cheese, plus extra for garnish

1/4 cup extra virgin olive oil

2 tablespoons freshly squeezed lemon juice

1/4 cup chopped fresh parsley

1 teaspoon dried oregano

1 teaspoon dried basil

3/4 teaspoon salt, or to taste

1/2 teaspoon freshly ground black pepper, or to taste

1/4 to 1/2 teaspoon red pepper flakes (optional)

812 wooden or metal skewers

Instructions

1. Prepare the Chicken: Cut the boneless, skinless chicken breasts (or thighs) into uniform 1-inch cubes. Place in a large bowl and pat dry with paper towels.

2. Make the Marinade: In a medium bowl, combine minced garlic, 1/2 cup grated Parmesan, olive oil, lemon juice, parsley, oregano, basil, salt, black pepper, and optional red pepper flakes. Whisk until well combined.

3. Marinate the Chicken: Pour the marinade over the chicken cubes and toss to coat evenly. Cover and refrigerate for 30 minutes to 2 hours, up to 4 hours.

4. Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes. Metal skewers require no preparation.

5. Thread the Chicken: Thread the marinated chicken onto skewers, leaving a small space between pieces for even cooking.

6. Cooking the Skewers: Grill on medium-high heat (375-450°F) for 10-15 minutes, turning occasionally, or bake at 400°F for 15-20 minutes, flipping halfway, or pan-sear in a skillet for 10-12 minutes, turning every 2-3 minutes, until chicken reaches 165°F internally.

7. Check for Doneness: Use a meat thermometer to ensure chicken reaches 165°F (74°C) and juices run clear.

8. Garnish and Serve: Remove skewers from heat, sprinkle with extra Parmesan and parsley, and transfer to a serving platter.

9. Rest Briefly: Let skewers rest for a few minutes before serving to redistribute juices.

10. Serve warm with your favorite side dishes.

Notes

Marinate for 1-2 hours for optimal flavor, but avoid exceeding 4 hours to prevent texture breakdown from lemon juice. Use a meat thermometer for precise doneness. Pair with low-carb sides for a complete meal.
